Ingredients:
2 cups oat bran cereal
1/3 cup flour
1/2 cup brown sugar
1 tbsp baking powder
1 cup milk
2 eggs
1/4 cup vegetable oil
1/2 tsp each of cinnamon and salt
1/2 cup chopped nuts
1/2 cup raisins
Method:
Measure dry ingredients into a bowl. Stir with fork until blended. Make a well in the centre of the dry ingredients.
In another bowl, whisk the milk with eggs and oil. Pour into the well of dry ingredients. Add nuts and raisins. Mix until moist.
Bake in muffin pan approx. 15 minutes at 425 degrees F. Check the centre of the muffin with a knife. If the knife is clean, remove the pan from the oven and allow to cool before eating.
